
Introduction
Look, are these going to be as good as a Hobnob? No. Good to get that out there straight away.
I really like these cookies, but with any healthy cookie or biscuit, I think the big thing here is making peace with the fact that it won’t taste like a bar of Dairy Milk—but they are easy, fun, sweet, and do a solid job of satisfying a sweet tooth while keeping you full.
Im probably being a bit harsh, I think these are excellent. They have a hit of protein, they’re a good source of fibre, and they pair beautifully with a cup of tea, so they are well worth making.
Ingredients
- 2 Tablespoons of Thick Greek Yogurt (something high in protein like Skyr)
- One Ripe Banana (black spots are a good sign!)
- Two Small Handfuls of Dates (chopped up, or buy them pre-chopped)
- 200g of 70% (or higher) Dark Chocolate
- 2 Tablespoons of Honey
- 200g of Oats
- 1 Egg
- A Pinch of Salt
Steps
1. Preheat your oven to 180°C and line a baking tray with baking paper.
2. Peel the banana, chop it into chunks, and mash it with a fork in a bowl with a pinch of salt until it forms a paste. Then crack in the egg and mix all till well combined.
3. Add the honey and mix well with another little small pinch of salt.
4. Stir in the Greek yogurt until everything is combined.
5. Chop the dark chocolate into small chunks (think chocolate chip size).
6. Add the chocolate, dates and oats to the bowl. Mix everything really well until it forms a sticky dough.
7. Take small handfuls of the mixture (aim for golf ball size) and roll them between your hands until smooth. Place each ball onto the baking tray, press down to form cookie shapes, and repeat until all the mixture is used up.
8. Bake for 18 minutes or until a nice golden colour on top with some browner bits, then get them out and let them cool on a rack.
9. Enjoy with a cup of tea. These are lovely just out of the oven (just let them cool a little…)
Tip: These store well in an airtight container for a few days, making them a great grab-and-go snack!
