
Introduction
Made famous on Instagram late last year, this one might sound a bit strange at first—kind of like scrambled eggs, but really, it’s just a scrambled pancake batter.
If it’s not for you, that’s totally fine, but I think it’s a brilliant little breakfast: balanced, satisfying, fun, and just something a bit different to inject some variety into your week.
It takes about 10–15 minutes and is well worth giving a go!
Ingredients (Serves 1)
- 1 ripe banana (medium to large)
- 1 medium egg
- 1 tsp honey
- 60g porridge oats
- Pinch of salt
- Pinch of cinnamon
- Small handful of dried fruit and chopped nuts
- Optional: A square of dark chocolate, chopped
Steps
1.Preheat your pan to medium-high heat (around 3.5–4 out of 5) and add a small touch or spray of oil.
2. Mash the banana in a large bowl with a pinch of salt and the honey. Don’t worry if there are a few lumps—just aim for a rough paste.
3. Crack in the egg and mix well until fully combined. Then stir in the oats and cinnamon.
4. Pour the mixture into the pan, spreading it out slightly like a pancake. Let it cook for a couple of minutes until the bottom starts to brown.
5. Sprinkle your dried fruit and nuts over the top while it’s cooking. Once the underside is nicely golden, start scrambling the mixture—just like you would with scrambled eggs.
6. Keep stirring and moving the mixture around the pan for a minute or two until it’s mostly dry and cooked through.
7. Serve immediately with a scoop of high-protein yogurt and some fresh fruit.
Optional: While it’s still hot, sprinkle over a little chopped dark chocolate and let it melt into the mix. Absolute heaven.
