
Introduction
This is a recipe I find myself making at least once a day. I know eggs and yogurt might sound like an odd combo, but trust me—it works. Dishes like Turkish eggs have been doing this for years, so there’s proof right there. Is this the most perfectly balanced meal? No, it could do with more veg and color. But if you use a good wholegrain bread, add nuts and seeds, and go big on the spices, this becomes a quick, high-protein meal that’s fun, satisfying, and—most importantly—tasty.
Ingredients (Serves 1)
- 2 Slices of your Favourite Bread (preferably wholegrain)
- 2 Eggs
- 2 Tablespoons of High-Protein Yogurt (Skyr works well)
- 2 Teaspoons of your Favourite Seasoning Blend (e.g., Garam Masala, Italian Seasoning) – but I highly recommend making your own dukkah mix to use.
- 1 Tablespoon of Mixed Nuts and Seeds (Pumpkin Seeds, Sesame Seeds, or Chopped Nuts)
- A Good Pinch of Salt
- 1 Teaspoon of oil or spray oil for frying
Steps
1. Toast the bread – Simple Stuff.
2. Fry the eggs – Heat a pan on high with a teaspoon of oil. Once hot (test by hovering your hand over it, not touching it!), crack in your eggs and fry for 2-3 minutes.
3. Steam-finish the eggs – Cover the pan with a lid (or anything that fits over the eggs at least), remove from heat, and drop a teaspoon of water into the pan before quickly covering it again. Let them sit for another minute or two until the tops are just set.
4. Assemble – Once the toast is ready, spread a tablespoon of yogurt on each slice. Sprinkle over a teaspoon of your spice blend per slice, plus a pinch of salt.
5. Top with eggs – Place your eggs on top, then sprinkle over another teaspoon of spices and your chopped nuts/seeds. Finish with another little pinch of salt.
